California Fried Rice

1 tbsp vegetable oil
4 green onions, sliced
1 celery stalk, thinly sliced
1 chopped red pepper
1 cup finely chopped cooked ham
3 cup cooked long grain rice
4 egg lightly beaten
1 tbsp soy sauce
4 cup cooked oriental vegetables
optional toasted sliced almonds

Directions

  1. In a large skillet, heat oil over medium heat.
  2. Saute raisins, green onions, celery, red pepper and ham until vegetables are tender crisp.
  3. Stir in rice. Make well in center of rice mixture; add eggs and soy sauce.
  4. Cook, gradually stirring eggs into rice, until eggs are just set.
  5. Garnish with toasted sliced almonds, if desired. Serve with oriental vegetables.
