Morning Mug Spinach & Cheese Frittata

2 egg
1/2 cup baby spinach, chopped
2 tbsp shredded cheddar cheese
1 tbsp green onions, chopped

Directions

  1. Grease large mug with non-stick cooking spray; whisk together eggs, salt and pepper. Stir in spinach, cheese and green onions.

  2. Microwave on High for 30 seconds; stir mixture. Repeat twice until eggs are set and uniformly cooked. Let stand for 1 minute before serving.

 Notes

  • Top the frittata with diced avocado and fresh salsa for a tasty garnish.
